Clean Eating Recipe of The Week | Tabbouleh

Welcome to our first instalment of our Clean Eating Recipe of the week. This week we feature Mrs Niko’s new spin on an old favorite, tabbouleh.

Traditionally tabbouleh is made using cracked wheat (burghul), however given both Mrs Niko and I have a wheat intolerence she has come up with this great alternative:

  • 1/2 Cup White Quinoa
  • 1/2 Cup Red Quinoa
  • 2 Cups Water
  • Large Bunch of Parsley (flat leaf or curly or a mix of both)
  • 3 Large Shallots thinly sliced (you can use red onion instead)
  • 4 Medium Sized Tomatoes Diced
  • Juice of 1 Large Lemon
  • 2 Tablespoons of Extra Virgin Olive Oil

  • Rinse quinoa and place in a saucepan with 2 cups of water
  • Bring to the boil, reduce heat, cover and cook on low heat of 15 minutes or until water is absorbed
  • The quinoa is cooked when the little ‘tails’appear
  • Once cooked set aside to cool
  • Chop parsley quite finely and add to the cooled quinoa along with tomatoes and shallots. Mix well
  • Add lemon juice and olive oil, mix well and serve

This makes quite a large bowl as it’s very popular in our house and we like to have left overs for lunch. We normally serve this with grilled beef steak, lamb or chicken breast.
